" As a chef I had 100's, most rare are those made with exotic milks or by unusual methods, I had Yak, reindeer, Musk ox and Horse milk cheese's, even ones with truffles in them from France and Italy, Casata di Sardinia, a sheep milk cheese which they ferment outdoors and allow the fly maggots to crawl into is a bit of a rarer item. I cooked with 10-20 yr old Parmesan cheese to, we only used a small amount when making our Risotto Milanese or the Saffron Linguine with White truffles and EX V olive oil, a dab of french cultured butter and a splash of white truffle oi"


How is cheese made, whats the process it goes through?

Im wanting to know the process in which cheese is made, any idea's?


" enzymes added to milk to facilitate clabbering(thickening).
The milk is then heated to a certain temperature and kept at that temp for a short time.
the milk is then strained to remove the solids from the whey(the liquid part.)
The steps taken after that depend on what kind of cheese you want.
At this point you have cottage cheese."

" A very subjective question, my dear woman. Generally speaking, i enjoy peccorino romano cheese. It is a hard italian cheese made from sheep's milk, it has a very strong, salty flavor that isn't for everyone. I like wrapping it in prosciutto and eating it with canteloupe, or simply having slices of it with salami and rustic bread (ideally with a decent Italian red wine) On a sandwich, i love swiss, pepperjack and cheddar (and by itself, sharp white cheddar is amazing, it's great with fuji apples too), and muenster is great too. Feta takes salads to the next level, and mizithra is awesome on spaghetti tossed in browned butter. Honestly, when it comes to cheese, as long as it isn't american, i'll eat it, and most likely i'll enjoy it. If you want to find the cheese you like, go to either as many specialty (meaning they deal with gourmet foods and imported goods) stores as you can manage, and see if they'll let you sample any cheese that looks and/or sound good. If they aren't particulalry busy, they may even help you make a selection based on your flavor preferences. Guten Appetit."

" Wensleydale and Halloumi"

" 1. Mozzarella, because the string texture brings the cheese back to life!! YUMMM!¬ 2.Cheddar. So strong, but that flavour as the cheese melts in my mouth with that flavour, I cannot resist a little bite. "

" Cheddar followed by Parmesan I find Parmesan goes great with Pasta of most varieties, as well as it does a Pizza Pie, and Cheddar is just my all-time favorite cheese. Great taste, and compatible with most the meals I enjoy"
